The infinite palette of aromatic herbs in the hotel’s vegetable garden is often the starting point for the creations of chef Pascal Cayeux. As close as possible to the product, he plays on the combination of flavours that make up his garnishes and, thanks to his perfect mastery of seasonings, he takes his guests on a journey…
Francis Péan, the hotel’s pastry chef, is a lover of his island and its local products. Passionate about citrus fruits, he makes them into sorbets and sorbets, desserts into éclairs, and homemade jams for gourmet breakfasts, served in the restaurant room.

At the hotel bar
In the hushed atmosphere of the hotel bar, in the gardens or on the beach at sunset, the barmen offer the best of their cocktails and the tasting of delicious Corsican tapas, “I PIATTINI”, for dinner.
With Corsican songs as a backdrop, the bar at Cala Rossa welcomes its guests in a friendly atmosphere and offers a menu with a fine selection of whiskies, cognacs, vintage Armagnac or traditional Corsican liqueurs.
During the day, everything takes place at the beach bar. For a refreshing break, it is possible to sip cocktails of fresh fruit and vegetables from the garden, milkshakes, iced teas with Corsican syrups or natural infusions Nucca, the hotel’s spa. In the evening, at dusk, the bar is occasionally transformed into a chic lounge.
The organic vegetable garden
The vegetable garden is a green paradise just a few meters from the stoves which magnifies the dishes of the chefs. Surrounded by mimosas and tamarisk trees, lavender and fig trees rub shoulders with aromatic herbs, tomatoes, aubergines, rocket and snow peas, all in a totally organic way. Designed by landscape architect Philippe Niez in 2010, the vegetable garden is composed of 7 circles forming a gigantic bunch of grapes.
The vegetable garden is also a wonderful place for meditation and discovery. There is the hotel’s “La Tisanerie”, where every morning, under the calarossian gazebos, organic and natural drinks with therapeutic virtues are offered to quench your thirst and relax…
